I like homemade soup year round so I thought I would post mine, it's simple, easy and only takes about an hour
I prefer to use fresh celery and carrots but other items can be fresh, canned or frozen your preference on those
since it takes longer for the celery and carrots to cook I start cooking them first with about 3 or 4 cups of salt and peppered water
1 cup each of celery and carrots and about 3 or 4 finely diced garlic cloves (do not smash them -- I like to cut these 3 items up very small)
when these are almost done add in about 1 pound of crumbled up ground beef (it takes about 15 to 20 mins for this to cook through)
while this is cooking strain the water from 1 can of corn, garden peas, green butter beans, and potatoes (sliced or small round ones) and rinse the salt off them, add to above ingredients
next add in 1 can of stewed or finely diced tomatoes and 1 can of tomato sauce (I prefer Hunts tomato sauce because it is more red than an orange color)
add more water, salt and pepper if needed, stir and just let it simmer 5 or 10 min until everything is hot
I don't like rice, green beans or macaroni in mine because it gets mushy
you can use chicken instead of ground beef if you prefer
